Your mom doesn’t cook. Breakfast may be an important meal, but it’s not one she bothers with. You want to change that. You want your mom to start eating a healthy breakfast each day. With a freezer packed with quick breakfast items, she can have a hearty meal without much effort.
In a pot, mix 3 cups of steel cut oats with 9 cups of water. Bring to a boil and lower heat. Cook for 30 minutes. When thick, stir in 1 cup of diced apple, 1 cup of walnuts, 1 tsp cinnamon, ½ cup maple syrup, and ½ cup golden raisins. You can play around with other combinations, such as bananas, pecans, and cacao nibs.
Spoon the oatmeal into greased muffin tins. Cover with foil and freeze. When a quick breakfast is needed, remove one oatmeal cup and place it in a microwavable bowl. Cook for 4 to 5 minutes stirring every minute or two. You can also skip cooking and thaw it in the fridge overnight for the next morning’s breakfast.
Yogurt and Fruit.
Fill ice cube trays about three-quarters of the way with whole raspberries and blueberries. Pour some kefir over them. Pop them in the freezer. These yogurt and fruit cubes become excellent smoothies when blended with some almond or cashew milk and honey.
If your mom doesn’t like yogurt, you can use fruit juice or puree in place of the kefir. Pair raspberries with apricot nectar or blueberries with grape juice.
Freezer Breakfast Sandwiches.
Spray a muffin tin with non-stick cooking spray. Crack one egg into each cup. Sprinkle with salt and pepper to taste. Bake at 325 until the egg has set. Pull out and let cool.
Toast 12 English muffins. Put one egg onto the English muffin. Top it with a slice of cheese and some nitrate-free turkey, chicken, or vegetarian bacon if desired. Place the top of the English muffin on the sandwich and wrap in deli paper.
Move all of the sandwiches to a large freezer bag. To cook, simply pop the sandwich into the microwave until thawed and warmed.
